Nathalie’s recipe: Bounty Bars

We are glad to introduce you to Nathalie Hayward, our new TEAM TENZING member. Nathalie will be sharing TENZING recipes with us. Her first recipe is super healthy and easy raw bounty bars to go, with the TENZING for a double whammy energy surge.

 Coconut is full of healthy Medium-chain fatty acids that our bodies easily use for energy and increase our levels of good cholesterol. They contain lauric acid: an all natural antibacterial, antiviral & anti fungal which keeps your immune system healthy. Besides, they’re high in fibre, keeping you satiated for longer. Cacao is packed full of antioxidants and minerals (particularly magnesium), it’s also a great source of B vitamins.
Combine this snack with TENZING and you are sure to feel superhuman. Perfect to take with you on any expedition.

Nathalie’s Coconut Filling recipe

These are the ingredients you’ll need:

2 cups (200g) desiccated coconut
3 tbsp coconut oil
3/4 cup (160ml) coconut cream
2 tbsp coconut nectar/maple syrup/rice malt syrup (or a few drops of stevia for sugar free)

Chocolate Coating

160g raw dark chocolate
optional: or you can make your own..
½ cup (60g) cacao powder
¼ cup (60ml) melted coconut oil
2 ½ tbsp melted cacao butter
1 tsp vanilla extract
2 tbsp coconut nectar/sugar (or more to taste)

Method:

1. On a very low heat mix together coconut oil, coconut cream and sweetener until ust melted and remove from heat.
2. Stir in desiccated coconut, spoon mixture into a lined 15x15cm baking tin, press down firmly and place in freezer for 20-30 minutes.
3. melt chocolate in double boiler. Take coconut mix out of freezer and cut into 15 bars. Dip the bars in molten chocolate. place in the fridge for a few minutes to set, then go for a second dip. Store in fridge or freezer.
